docs: record verified executor metrics deployment (ticket-063)

Record version 2 of the canonical executor metrics documentation with observed deployment acceptance. The approved module from PR #62 is now installed in the existing Planfile service image; configuration and volumes were preserved, and a stopped rollback container is retained.

Validation: six published regression tests passed in the candidate image without network or production volumes. Live acceptance verified the installed SHA-256, partial metrics in the LLM prompt, diagnostic warnings, exception propagation, healthy HTTP service and an existing ticket read. The published Doctor analyzer reports zero matching findings in the installed module. Documentation placement and version checks passed.

Scope: this records a deployment of the approved module, not an assertion that the entire installed package was rebuilt from the merged tree. Private configuration and raw logs stay outside Git. The document records the preserved dirty checkout and historical missing Compose overlay limitation.
