Release Transcripted 1.1.68: version, appcast and cask

Before: v1.1.68 is published on GitHub, but the update feed and cask still point at 1.1.67.

After: merging puts 1.1.68 at the top of docs/appcast.xml, so installed apps get the update and the cask installs 1.1.68. Same shape as #1863.

What's in 1.1.68

• Hotfix: Writing's Screen Memory never reads Transcripted's own windows, which deadlocked a dictation paste when autocomplete was on (Writing: Screen Memory never reads Transcripted's own windows (fixes a paste freeze) #1939)

• Info.plist: 1.1.67 → 1.1.68 (tag v1.1.68 = ac4c847)
• docs/appcast.xml: 1.1.68 item with 4 deltas (from 1.1.67, 0.7 MB; from 1.1.66, 166.9 MB; from 1.1.65, 167.1 MB; from 1.1.64, 168.0 MB) and <sparkle:criticalUpdate sparkle:version="1.1.63" />
• Casks/transcripted.rb: 1.1.68
• Release-health fixture for v1.1.68 (DMG + all deltas, digests from the published assets); strict-checker, test-matrix and QA-bench refs moved to it; stale-cask fixture moves to 1.1.68

• Deltas not applied by hand on a Mac yet

Rollback: remove the 1.1.68 appcast item and point the cask back to 1.1.67.
