docs(mcp): explain fresh low-level server schemas

Changes

• Explain tool resolution for fresh low-level MCP servers in TypeScript and Python.
• Add the resolver options to both SDK configuration tables.

Why

Strict schemas can reject SDK-added arguments when each request creates a new low-level server.

Depends on PostHog/posthog-js#5165, PostHog/posthog-python#1009, and PostHog/sdk-specs#98.

Eager-graph budgets are report-only until a baseline is established. Sizes are gzip of public/**/*.js; eager size is webpack module source bytes for the modules actually shipped in the entrypoint's initial chunks (post-tree-shake).

please fix before merge: This sample hits the bug in PostHog/posthog-python#1009, so it should land after that fix. Small one on the TypeScript page: the table's return type should be { inputSchema } | undefined.
