feat: adding ability to specify different mcp server types

Before (the change)

• mcp server only supports stdio which makes it harder to host for multi user traffic usage

After (the change)

• allowing support for both stdio and http (defaulting to stdio)

@hwen3 Actually, I just merged. The only thing that was failing was our preview build, which doesn't even apply for this PR anyways. And it was failing because the push came from a fork, not from the repository. This work should be merged now, and will be released to production nearer the end of the month.
